
Mini-burgers were our dinner tonight – these have quickly become a favorite in our house.
- 1 pound ground beef
- 1 package of refrigerator biscuits
- 1 tablespoon garlic powder
- condiments as desired: bacon, lettuce, mayonnaise, mustard, ketchup, cheese
Mix the garlic powder in with the ground beef. Pop the refrigerator biscuits and bake according to directions. At the same time, form the ground beef into 8 equal-sized patties. Fry ‘em up. When the biscuits are done, remove from oven and slice open (like a hamburger bun). Serves 4.
We had these with the new Wheat Thins Artisan Cheese Crackers. The crackers are very, very yummy – a sharp and grown-up cheese cracker taste. Very flavorful!

For lunch we ate at our favorite local eatery: All-American Hot Dogs. They’ve gained this new, fancy and fanciful sign since we last ate there. And then we wandered next door to buy some cereal – we were nearly out. As I walked into the Food Lion, I glanced down and noticed a credit card on the ground. I picked it up, planning to hand it in at the customer service counter… but then I noticed the name. It was someone I actually know – ha ha! So I called to let them know it was found, and then drove it by their office to drop it off. How serendipitous it was that I was the one to find it, huh?
